Objectives of the Course
The aim of this course is to teach students, general principles of chilling and freezing, methods used for chilling and freezing seafood, the structure of cold storage, freezing equipments, chemistry of refrigeration systems, refrigerants, equipments used in refrigerated vehicles, calculation of cooling capasity, thawing methods, freezing and thawing rates and quality changes of frozen seafood.
